  1. Melt a big knob of butter in a pan.
  2. Than toss in your ocade sliced leeks and cook them until they are super soft.
  3. Add garlic and cook out for two minutes.
  4. Pour in double cream and milk.
  5. Then bring the whole mixture to a simmer.
  6. Tip in your diced Taleggio.Get a good spoon of nutmeg in there,and let it gently melt through the sauce.
  7. Grate some parmesan.
  8. Then season to taste with salt and pepper.
  9. Cook your paccheri in boiling salted water until al dente.
  10. Add pasta water and paccheri to your saucepan and give it a good stir until you’ve got a glossy sauce that beautifully coats your pasta.
  11. Spoon on to your plates.
  12. Then add oil ,pepper,parmesan.
  13. The sauce gets sucked up inside those pasta tubes to create a ridiculously creamy situation.
  14. You ‘re gonna love it.
