Healthy Veggie Balls Recipe Butternut and Haluminum

  1. Start by halving a squash, scooping out the seeds and drizzling it with oil and salt.
  2. Roast for 45 minutes to pickle some chillies.
  3. Slice them then add vinegar,water ,sugar and salt to a jug.
  4. Heat your mixture,then pour it over your sliced chillies.
  5. Add chopped red onion to a bowl with salt and lemon juice,then scrunch to lightly pickle.
  6. Add tomato,cucumber,parsley and sumac,then mix to combine.
  7. On to the koftes!Roughly chop a few green chillies.And a big bunch of parsley.
  8. Grate a block of halloumi.
  9. Add soaked dried chickpeas to a food processor and pulse until crumbs,parsley,chillies ground cumin ground coriander sumac and salt.
  10. Blend to a paste,then add your halloumi and pulse until it’s all combined.
  11. Roll your mixture into small rugby ball shapes.
  12. Fry your kofte in hot oil until it is golden and crispy.
  13. Brush warmed naan with garlic butter then add some yoghurt.
  14. Sprinkle some of that chopped salad over the top along with your kofte, your pickled chillies and a pinch of sumac.
