Herby Spring Veg with Burrata:

  1. Get the veg in a roasting tin with lots of olive oil season with salt and pepper and roast in a very hot oven.

  2. Meanwhile, pound the garlic into a paste, then add the basil and bash that up.

  3. Add the asparagus. Give everything a toss and pop it back into the oven for a further 10 minutes.

  4. In the meantime, your can boil and drain some peas.

  5. Place all the veg, including the peas in a bowl.

  6. Add the basil sauce and a a squeeze of lemon juice and toss well to coat. While this cools down, slice up some bread and drizzle it with olive oil.

  7. Toast it in the oven until it’s deeply golden.

  8. Get the bread into a processor, blitz it up, then de-seed a chili and add that.

  9. To assemble get your veg on the bottom of a plate and top with gooey burrata. Finish it all with the crispy chili crumb, then tuck in and enjoy.
