Asparagus And Leek Tart:

  1. Finely slice your leeks and chop up your asparagus.

  2. Zest your lemons, and finely slice the basil, stems and all!

  3. Fry off the leeks and asparagus in some olive oil seasoning generously.

  4. Once softening, add the basil, zest and oat cream. Bring to a simmer, add lemon juice, then reduce and leave to cool.

  5. Score the edges of the pastry and prod the inside of the border with a fork.

  6. Introduce the pastry to the veg, top with breadcrumbs and olive oil. Bake for 20-30 minutes until golden brown! Preheat the oven to 180C (350 F)
