Aubergine Parmigiana Orzo:

  1. Crisp basil bread crumbs make all meals better.

  2. Start by drizzling sourdough with olive oil and baking until crisp.

  3. Snap it into pieces then whizz your bread up in a blender with basil leaves and salt to make the best crispy topping.

  4. Dice your aubergines,then heat olive oil in a pan.

  5. Cook your diced onion until softened.

  6. Then get your aubergine in there and cook until soft.

  7. Add garlic,chilli flakes and tomato puree in there,then cook til jammy.Tip in halved cherry tomatoes.

  8. Add let them break down into a nice sauce.

  9. Cook your orzo in salted water.

  10. Add pasta water and orzo to the pan,then give it a good mix.

  11. Add parmesan salt and pepper.

  12. Spoon your orzo into bowls,and tear over some buffalo mozzarella.

  13. Add olive oil and your basil crumbs and you have a great meal.
