  1. So first up ,Lets sweat down the spanish with a pinch of salt.
  2. Now curing out as mush moisture as you possibly can.
  3. Die the spanish and add it to a mixing bowl.
  4. Along with the ricotta ,parmesan ,nutmeg flour ,salt and egg.
  5. Give it a really good mix.
  6. Add black pepper to taste and put the mix in the fridge.
  7. Gently cook a few cloves of garlic in the olive oil.
  8. Add the basil and give it a mix.
  9. And then go in with the tomatoes and salt.
  10. Simmer it for about 15 minutes.
  11. Roll the malfatti mix into golf ball sized pieces and place on a lightly floured tray covered with greaseproof paper.
  12. When they are done cook just like pasta.
  13. In boiling salted water for a couple of minutes.
  14. Plate up a good spoon of the tomato sauce.
  15. Place the malfatti on top.And add a sprinkle of parmesan.
