- So first up ,Lets sweat down the spanish with a pinch of salt.
- Now curing out as mush moisture as you possibly can.
- Die the spanish and add it to a mixing bowl.
- Along with the ricotta ,parmesan ,nutmeg flour ,salt and egg.
- Give it a really good mix.
- Add black pepper to taste and put the mix in the fridge.
- Gently cook a few cloves of garlic in the olive oil.
- Add the basil and give it a mix.
- And then go in with the tomatoes and salt.
- Simmer it for about 15 minutes.
- Roll the malfatti mix into golf ball sized pieces and place on a lightly floured tray covered with greaseproof paper.
- When they are done cook just like pasta.
- In boiling salted water for a couple of minutes.
- Plate up a good spoon of the tomato sauce.
- Place the malfatti on top.And add a sprinkle of parmesan.
