Roasted Squash with Zhoug:

  1. So peel and slice the squash and then get it in a roasting tray and season it really nicely.

  2. Give it a good mix and pop it into the oven with the lemon juice and the yogurt.until it is nice and creamy zhoug or sahawiq is a spicy sauce from yemen which comes in different varieties.

  3. You get sahawiq bel-jiben, so with cheese and you get red visions made with tomatoes and you get this green version as well.

  4. It’s super easy, everything goes into the blender and you give it a whizz.

  5. We’re gonna finish this with hazelnuts for crunch, so toast them nicely.

  6. And then it’s just a process of layering everything up until you’ve got a big delicious plateful.
