Za Atar Chicken And Romesco :

  1. Cover the thighs in plenty of oil and season really well with sea salt.

  2. Thighs get them in a pan skin side down and put your potatoes on to parboil.

  3. Once the skin is golden and crispy, season really generously with the Za ‘atar.

  4. Get a roasting tray hot with plenty of oil,drain and add the potatoes and season well,and then place the thighs skin side up on top.

  5. Drizzle over the pan juices and add some more Za ‘atar and roast them for 30 minutes while you make the Romesco.

  6. Add the almond ,peppers, tomatoes ,chili ,garlic and paprika to a food processor.Blitz and season.

  7. Now keep the processor running and drizzle in the olive oil to emulsify.

  8. Remove the chicken and allow it.
