How to Make Za`atar Chicken Thighs.

Za`atar Chicken Thighs:

  1. So season the thighs nicely and get them in a pan skin side down.

  2. Put your potatoes onto parboil and look at that crispy skin.

  3. Season generously with the za`atar.

  4. Add the potatoes to a hot roasting tray and then place the thighs in the skin side up.

  5. Drizzle over the pan juices with some more za`atar.

  6. Roast for 20 minutes while you make the romesco.

  7. Add everything into the food processor and give it a good blitz till it is nice and smooth. Add drizzle in the olive oil and season to taste.

  8. Remove the chicken and then allow it to rest for five minutes. Meanwhile, put the roastines back in the oven on full blast and spread the romesco over the plate. Top it with the roast potatoes and then the chicken.

  9. Finish with parsley and a nice drizzle of olive oil.

  10. Enjoy.
