You can stand there and watch these skillful hands for hours to turn flour, sugar and stuff into something magical. You can’t resist the freshly cooked smell of the gooey batter. It’s like your hunger has suddenly awoken and you can’t stand a minute to try these comforting foods.

Why wait the whole year for these treats? Why not bring the fair at home. And made them in your kitchen. They are super-fast and easy to make. You just need some tricks to master. Which are not that hard at all. 

Let’s start with funnel cake. And to make things even easier, try it with pancake mix. It takes 30 minutes maximum, including the cooking time to have fair food at your home.

Tricks of the trade

  • The batter should be runny and flowing in consistency than the standard pancake batter.
  • The most important thing is the perfect temperature of the oil. It should be around 360 to 375 F. If it is too hot the batter will immediately cook. It will not stick together and will disperse throughout the skillet.
  • If the oil is too cold, the funnel cake will not turn into the desired golden color and will be too oily and soggy.
  • To check your oil temperature, drop a few drops of batter in the hot oil. If drops immediately swell and come on the surface of the oil without browning, your oil is ready.
  • Use a nozzle bottle to pour batter into thin and even strips.
  • Be swift in pouring the batter into the oil to ensure thin strips. If you are slow, the strips will be thick and will not be crispy.
  • Don’t worry about the shape and size. Just make a rough 5-inch circle.
  • Don’t make it too thick with layers or too thin.
  • Let your funnel cake rest on tissue paper for a minute or two to fully drain out the excess oil. This is important for funnel cake to get its distinctive crispness.
  • Your funnel cake will be a little soft when cooked. It will harden after a minute. 

Ingredients

Buttermilk Pancake Mix 1 cup

Sugar 2 tablespoon 

Water ½ cup

Vanilla extract ½ teaspoon

Oil 1 tablespoon

Oil for frying

Caster sugar to sprinkle on top

Method 

  • Mix all the ingredients thoroughly, to make a flowing batter.  
  • Fill a nozzle bottle.  
  • Heat oil in the skillet to 360 to 375 F. 
  • Start drizzling the batter quickly in a circle, zigzag, and crisscross style.
  • Turn after 2 minutes.
  • Cook the other side for another 2 minutes.
  • Cool on a tissue paper for a minute. 
  • Sprinkle it with castor sugar.

You can top your funnel cake with your choice of fruits, cream, maple syrup, chocolate syrup, or peanut butter. Go fancy with the toppings to have a gourmet experience.
