How to Make Castella Cupcake Recipe.

Castella Cupcake:

  1. (Wet MIx) Melt 35g butter and 55g milk together in the microwave.

  2. Add 30g honey and mix well, keep a side.

  3. Separate 4 Eggs add ½ tsp of salt into the egg whites start whipping once whit foams appear add 85g of sugar slowly while whipping until small stiff peaks form.

  4. Add the egg yolks one by one and continue whipping until homogenous.

  5. Sift 100g of cake flour in two batches, folding to combine, Temper the wet mix with a bit of the batter.

  6. Pour the wet mix into the butter, fold to combine.

  7. Pour into cupcake liners in cupcake pan.Take wooden stick and check for andy large bubbles bang the tray and bake 160 C 20-25 min
