Pumpkin Spice Tea Cake:

  1. Add pumpkin sugar and oil.Mix until combined.

  2. Add egg and vanilla combine flour, pumpkin spice, salt baking powder and baking soda.

  3. Add flour mix to pumpkin mix.Mix until just combined scrape down side.

  4. Pour batter into loaf pan.

  5. In a bowl combine egg whites and sugar whisk over a double boiler.Whisk until mixture is frothy and sugar is dissolved(120 F)

  6. Whisk at medium/high speed. Beat until glossy, stiff peaks form (10 min) scoop meringue over pumpkin batter swirl knife through meringue to form marble pattern.

  7. Bake at 325 F for 90 minutes, let cool cut and enjoy!
