How to Make Greek Baked Beans

Greek Baked Beans:

  1. You wanna kick off by dicing one large onion,one stalk of celery and one carrot.

  2. Roughly chop  four large tomatoes.

  3. Add olive oil to a wide oven-proof pan then tip in your onion, carrot and celery.Cook for a few minutes until soft.

  4. Add dried oregano and tomato puree, then cook out for a couple of minutes.

  5. Tip in your chopped tomatoes.

  6. Once they’ve gone nice and jammy add your butter beans vegetable stock,bay leaves cinnamon stick and some salt and pepper.

  7. Bring to a simmer, then pop on a lid and cook in the oven for 30 minutes.

  8. Take it out of the oven, give it a stir then pop it back in the oven for 25 minutes with the lid off.

  9. Get it out of the oven and sprinkle the top with finely chopped mint, spoon it into bowls and eat up.
